It's just cats being cats, they're looking for something fun to pounce on and attack all the time. They don't know that the rubber bands aren't food so they'll try to eat it too. Just like they would with real prey, but hopefully you didn't feed your cat a rubber band because that could cause some serious problems and might need surgery.
